{ My favourites :: Finnish baking }

I was looking back on my posts in May and realised just how many Finnish, or Finnish inspired, baked goods I made. Perhaps (obviously?), my favourite would be the cardamom and coffee macarons. Though give me anything sweet with cardamom and I am a happy girl.
My faithful baking companion, The Great Scandinavian Baking Bookby Beatrice Ojakangas, may be returned to the shelf for now but I am sure she will make an appearance again soon.
In the meantime, here is a quick re-cap of what I made last month during my Finnish baking adventures. This list surely now includes some of my new favourites.

Oh my, these would be m favorite as well. They look utterly delicious. I’ve tried Beatrice Ojakangas Danish recipe, and was successful and everybody just love it!
Like a beautiful cookbook cover Julie…gorgeous, each one of them. I want winter to come soon so I can try some of this too.I’ve done a Danish for a DB challenge once & it was FAB!!
I LOVE eatrice Ojakangas, and have made her pastries and potato lefse many times. You have more than done her justice. Beautiful pastries and photos!

Simplesong – thank you. A lovely compliment coming from you. I really do love packaging and have been doing some research for my own upcoming wedding. Now I can’t help myself being inspired by great ideas I see around in the meantime.
Gine – thanks. Have you tried the Italian method? That’s the only one I can get to work almost 100% each time. If you’re up for it, give it a whirl. I’m typing up a bit of a macaron 101 for myself (my own jottings from my various batches). I’ll send it through when it’s done!

I use a lot of berries too, in my baking. And I totally love both macarons and Karjalanpiirakka!
