{ ‘Simple cakes’ month }

Sometimes, the reward of baking, is purely the baking, plain and simple. The act of creating something made by hand. The special thought, and the effort of mixing sugar, butter, flour and eggs to share with friends or family. And the pleasure of the fragrant smell of fresh baked goods in your kitchen!
My recent hectic schedule reminded me of the fundamental joy of baking – and how rewarding something so simple can be.
I would be hard pressed to identify one simple cake I would make in a pinch, so this month, my challenge is to build a repertoire of simple and quick cakes.
To be classified as quick and simple, the recipe needs to:
- Only take ideally 5 minutes, and no more than 15 minutes, to put together
- Only need one bowl to prepare, excluding ingredient organisation
- Only take 60 minutes to bake (75 minutes maximum)
I already have a number of recipes that I am eager to try. Some from my favourite baking books, and some I have recently seen on my favourite blogs. What is your favourite, quick and simple cake recipe?
At the end of the month, no matter how time poor I am again in the future, I hope to have a handful of baking solutions that will adapt around my life.





Pound cake. You just need a pound of everything, mix up, bake and you’re done!

the fundamental joy of baking. that’s so it ! your opening paragraph above is just perfect, it says it all.
looking forward to your repertoire of simple (and fast, 5-15 minutes ?! wow !) cakes that is sure to become my own as well.
i’m not a big cake person, as i tend to make cookies and confections more often. my go-to speedy dessert is often meringues. relatively fast to whip up (even with a hand mixer !), then you just have to be patient while they bake. one bowl too ! another fantastic theme for the month ahead !
Really looking forward to this as I love low effort baking which reaps comforting results. My easiest would have to be a banana loaf but more impressive is a friands recipe I have.
I don’t know if you have a copy of Nigella Lawson’s How to be a Domestic Goddess but my all time favourite simple cake is her Chocolate and Orange storecupboard cake. I have made this all in the double boiler saucepan and tipped it in the cake tin so there is hardly any washing up and it tastes amazing.
One of my favorite one-bowl super simple cake recipes is for Wacky Cake. It’s a chocolate cake but instead of eggs or milk it has vinegar, oil and vanilla. And all ingredients are mixed right in the cake pan, so no bowls are needed!

Both are perfect when you need something fast and have no time. And both exquisite, especially the layer cake.
Oh, baking is absolutely fundamental – it is like breathing for me.
I love Hershey’s Black Magic Cake, and also my grandmother’s chocolate applesauce cake. For non-chocolate cakes, Marcy Goldman’s cinnamon coffee cake.
A good old Quatre Quart (pound cake) Nice and buttery
What a fantastic theme! Last week I made devil’s cake and sandwiched it in between a layer of strawberries and cream and received alot of compliments about it. The best thing about it was how easy it was to prepare; it was a matter of mixing everything in one bowl (which equals less cleaning up) and popping it in the oven ofr about 1 hour.. Definately a keeper and will definately share it on my blog soon

Love this month’s theme! I’ll be checking in frequently to see what you’re posting – can always use more quick cake recipes. This is one of my favorites, although I prefer a single layer, uniced and undecorated save a sprinkly of confectioners’ sugar, with a cup of coffee or tea. The crumb of the cake is unbelievably tight and soft at the same time, and I love the flavor and aroma of almond extract. Since it makes two 9″ layers, I stick one in the freezer to enjoy later! Hope you try it and love it as much as I do…

I prefer to try new recipes rather than repeat old ones, but somehow I keep coming back to Lemon-Glazed Butter Cake from a past issue of Gourmet magazine. It’s fool-proof, flawless, and has a complex flavour for how simple it is. Plus, you can dress it up however you want!

Tartine’s Zucchini and Orange Marmalade Tea Cake is gaining ascendancy, but I also like their Banana Date Tea Cake. The Citrus Almond Tea Cake is next on my list

I love baking cakes, sometimes in a very busy schedule the easiest cake to prepare is the Orange Cake which only takes 15 minutes or less to prepare, bakes perfect and the taste is amazing.
I couldn’t agree more, hectic schedules can detract from the original joy of baking, the reason you started baking in the first place. Having said that, I no matter how busy I am, when I’m in the middle of baking, I’m transported to another world where all my cares just melt away.

I’m not sure! I’ve made many easy cakes, but they often use more than a bowl =D. I hope that March is less hectic for you!
The simplest, most delicious cake in my experience would have to be my mother-in-law’s hazelnut cake (http://bonvivant.wordpress.com/2009/07/10/gateau-facile-et-bon-easy-and-good/). I love it on its own with a sprinkling of icing sugar although I’m sure some creme chantilly wouldn’t hurt

This is brilliant Julia, you’re boiling it down to the basics and i’m sure you’ll find a number of your readers will use this month as an almanac of simple cake recipes and refer back to it over time. Although your aspirational recipes are WONDERFUL too.

I’m a bit scared of my oven and cake baking in general(it says it’s 50 degrees cooler than it really is!) so i’m looking forward to trying one of your simple recipes.

After a few hectic months at work, I admit I had some trouble getting the will to bake back, but once I did, I remembered and agree with you what a joy it is to create something with your own hands and with love.
It’s been ’round the blogosphere a dozen times by now, but my favorite simple cake is a variation of the Black Magic Cake from (surprisingly) Hersheys: http://www.hersheys.com/recipes/recipes/detail.asp?id=4754 It’s got such a deep, rich flavor you wouldn’t expect from just cocoa powder.

I prefer unfussy cakes where the natural flavours in the cakes come through, especially tea/ coffee time cakes.
My yogurt cake…..can withstand all additions and can be transformed a thousand ways. Plus it doesn’t require a mixer-all by hand. Perfect everytime…….
Great idea Julia. My favourite simple cakes to whip up are Rose Beranbaum’s Perfect Pound Cake and her Chocolate Butter Cake, both of which I make often in cupcake form or as bases for my cake decorating escapades. Simple, tasty and I have made them so many times now, I can do it on autopilot.
I agree! the simplest things can be the most rewarding. I love easy and simple cake recipes and I think it’s a great theme for this month. I can’t wait to see what cakes you’ll bake.
